Ingredients
  

For the Chili
  • Vegan turkey-style mince – 250 g
  • Olive oil – 1 tbsp
  • Onion – ½ cup chopped
  • Garlic – 1 tbsp minced
  • Bell pepper – ½ cup diced
  • Tomato puree – ½ cup
  • Cooked kidney beans – 1 cup
  • Water or broth – ½ cup
Spices
  • Chili powder – 1 tsp
  • Paprika – ½ tsp
  • Cumin – ½ tsp
  • Salt – ½ tsp
  • Pepper – ¼ tsp
Garnish
  • Spring onions – 1 tbsp chopped
  • Lemon wedge – 1

Method
 

  1. Heat olive oil in a skillet.
  2. Add onion and garlic and sauté until fragrant.
  3. Add vegan turkey mince and cook for 3 minutes.
  4. Add bell pepper and stir well.
  5. Sprinkle chili powder, paprika, cumin, salt, and pepper.
  6. Pour in tomato puree and water.
  7. Add kidney beans and mix thoroughly.
  8. Simmer for 10 minutes until thick.
  9. Garnish with spring onions and lemon.
  10. Serve hot with rice, bread, or tortilla chips.
