Chickpea Quinoa Bowl Mediterranean Recipe

A nourishing vegan Mediterranean bowl made with quinoa, chickpeas, vegetables, and lemon-olive oil dressing.

Ingredients
  

  • Quinoa uncooked — 1 cup
  • Water — 2 cups
  • Chickpeas — 2 cups
  • Olive oil — 2 tbsp
  • Lemon juice — 2 tbsp
  • Garlic powder — 1 tsp
  • Cherry tomatoes — 1 cup
  • Cucumber diced — 1 cup
  • Spinach — 2 cups
  • Fresh parsley — 2 tbsp
  • Salt — ½ tsp
  • Black pepper — ¼ tsp

Method
 

  1. Rinse quinoa thoroughly.
  2. Cook quinoa with water in saucepan for 15 minutes.
  3. Preheat oven to 400°F (200°C).
  4. Toss chickpeas with 1 tbsp olive oil and garlic powder.
  5. Roast chickpeas on baking sheet for 15 minutes.
  6. Place cooked quinoa into bowls.
  7. Add roasted chickpeas, tomatoes, cucumber, and spinach.
  8. Mix remaining olive oil with lemon juice, salt, and pepper.
  9. Drizzle dressing over bowl.
  10. Garnish with parsley before serving.
