Method
- Heat olive oil in a pan and cook plant-based chicken thighs for 3 minutes each side.
- Remove and set aside.
- Add onion and sauté 2 minutes.
- Add garlic and mushrooms, stirring for 3 minutes.
- Add pepper, thyme, and salt.
- Pour vegetable broth and simmer 2 minutes.
- Add plant cream and stir until smooth.
- Return the thighs to the pan and simmer 5 minutes.
- Finish with lemon juice and parsley.
