Ingredients
  

  • 4 plant-based chicken thighs
  • 1 tablespoon olive oil
  • 1 cup mushrooms sliced
  • 1 medium onion chopped
  • 1 tablespoon garlic minced
  • 1 cup plant cream or coconut cream
  • ½ cup vegetable broth
  • ½ teaspoon pepper
  • 1 teaspoon salt
  • ½ teaspoon thyme
  • 1 tablespoon lemon juice
  • 1 tablespoon parsley chopped

Method
 

  1. Heat olive oil in a pan and cook plant-based chicken thighs for 3 minutes each side.
  2. Remove and set aside.
  3. Add onion and sauté 2 minutes.
  4. Add garlic and mushrooms, stirring for 3 minutes.
  5. Add pepper, thyme, and salt.
  6. Pour vegetable broth and simmer 2 minutes.
  7. Add plant cream and stir until smooth.
  8. Return the thighs to the pan and simmer 5 minutes.
  9. Finish with lemon juice and parsley.
