Ground Turkey Sweet Potato Hash Recipe

A hearty vegan skillet meal combining plant-based turkey, sweet potatoes, vegetables, and warm spices cooked until crisp and tender.

Ingredients
  

  • Plant-based ground turkey — 12 oz
  • Sweet potatoes peeled and diced — 3 cups
  • Onion chopped — 1 cup
  • Yellow bell pepper chopped — 1 cup
  • Garlic minced — 2 cloves
  • Olive oil — 2 tbsp
  • Smoked paprika — 1 tsp
  • Ground cumin — ½ tsp
  • Salt — ½ tsp
  • Black pepper — ¼ tsp
  • Baby spinach — 2 cups
  • Fresh parsley — 2 tbsp

Method
 

  1. Heat 1 tbsp olive oil in skillet over medium heat.
  2. Cook diced sweet potatoes for 10 minutes, stirring occasionally.
  3. Add remaining olive oil, onion, bell pepper, and garlic. Cook 4 minutes.
  4. Add 12 oz plant-based ground turkey and cook 5 minutes.
  5. Stir in paprika, cumin, salt, and black pepper evenly.
  6. Add spinach and cook 2 minutes until wilted.
  7. Continue cooking until potatoes become lightly crisp.
  8. Garnish with parsley and serve warm.
