Ingredients
  

  • 1 lb vegan shrimp store-bought or homemade
  • 2 tbsp olive oil
  • 3 tbsp lemon juice
  • 1 tbsp lemon zest
  • 3 garlic cloves minced
  • 1 tsp dried oregano
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp chopped parsley garnish

Method
 

  1. In a bowl, whisk olive oil, lemon juice, lemon zest, garlic, oregano, paprika, salt, and pepper.
  2. Toss vegan shrimp in marinade and coat well.
  3. Cover and refrigerate for 15 minutes.
  4. Thread marinated vegan shrimp onto skewers.
  5. Preheat grill to medium-high heat.
  6. Grill skewers 2–3 minutes per side until golden with char marks.
  7. Garnish with parsley and extra lemon juice before serving.
