Ingredients
  

  • 1 ½ cups almond flour
  • 1 scoop 25g vegan vanilla protein powder
  • 2 large ripe bananas mashed
  • 2 tbsp maple syrup
  • 1 tbsp coconut oil melted
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • 2 tbsp plant milk as needed
  • Optional: 2 tbsp chopped nuts or chocolate chips

Method
 

  1. Prep the base.
  2. Mash 2 ripe bananas in a bowl until smooth.
  3. Add wet ingredients.
  4. Mix in maple syrup, melted coconut oil, and vanilla extract.
  5. Add dry ingredients.
  6. Stir in almond flour, protein powder, baking powder, cinnamon, and salt.
  7. Adjust texture.
  8. Add 1–2 tbsp plant milk if the batter feels too thick.
  9. Pour and smooth.
  10. Transfer batter into a lined loaf pan.
  11. Bake.
  12. Bake at 180°C for 35 minutes or until golden and firm.
  13. Cool and serve.
  14. Let it rest before slicing for perfect texture.
