Ingredients
  

  • 4 slices whole-grain bread toasted
  • 150 g tempeh or seitan grilled or pan-fried
  • 1 ripe avocado sliced
  • 1 cup lettuce leaves
  • 1 medium tomato sliced
  • 2 tablespoons vegan mayonnaise
  • 1 teaspoon mustard
  • Salt and black pepper to taste

Method
 

  1. Toast bread slices until golden brown and crispy.
  2. Grill or pan-fry tempeh/seitan slices with a pinch of salt and pepper.
  3. Spread vegan mayonnaise and mustard on each bread slice.
  4. Layer lettuce, tomato, avocado, and tempeh/seitan between slices.
