  • 1 medium cauliflower head about 4 cups riced
  • ½ cup almond flour
  • 3 tbsp ground flaxseed + 9 tbsp water flax eggs
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup marinara sauce
  • 1 cup shredded vegan mozzarella
  • ½ red bell pepper sliced
  • ½ cup mushrooms sliced
  • ½ small red onion thinly sliced
  • ½ cup baby spinach leaves
  • Fresh basil chopped (for garnish)

Method
 

  1. Preheat oven to 400°F (200°C). Line baking sheet with parchment.
  2. Pulse cauliflower in food processor until rice-like. Steam for 5 minutes, then cool slightly.
