Ingredients
  

For the Vegan Chicken Bake
  • Vegan chicken fillets – 250 g
  • Olive oil – 1 tbsp
  • Maple syrup or agave – 2 tbsp vegan honey substitute
  • Mustard – 1.5 tbsp
  • Garlic – 1 tsp minced
  • Paprika – ½ tsp
  • Salt – ½ tsp
  • Pepper – ¼ tsp
Veggies
  • Potatoes – 1 cup diced
  • Carrots – ½ cup sliced
  • Zucchini – ½ cup chopped
  • Olive oil – 1 tbsp
  • Salt – ¼ tsp
Garnish
  • Parsley – 1 tbsp chopped

Method
 

  1. Preheat the oven to 200°C.
  2. Toss potatoes, carrots, and zucchini with olive oil and salt.
  3. Spread them in a baking dish.
  4. Mix maple syrup, mustard, garlic, paprika, salt, and pepper.
  5. Coat vegan chicken fillets in the sauce.
  6. Place them over the vegetables.
  7. Bake for 20 minutes, flipping once.
  8. Brush extra sauce on top during the last 5 minutes.
  9. Garnish with parsley and serve warm.
