Ingredients
  

  • 4 plant-based chicken thighs
  • 1 tablespoon olive oil
  • ½ cup mixed olives pitted
  • 1 medium onion chopped
  • 1 cup cherry tomatoes
  • 1 tablespoon garlic minced
  • 1 teaspoon oregano
  • ½ teaspoon thyme
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped parsley

Method
 

  1. Heat olive oil in a pan over medium heat.
  2. Add plant-based chicken thighs and cook 3 minutes each side.
  3. Remove and set aside.
  4. Add onion and garlic, cooking 2 minutes.
  5. Add cherry tomatoes and olives, stirring for 3 minutes.
  6. Add oregano, thyme, pepper, and salt.
  7. Return thighs to the pan and cook 10 minutes.
  8. Add lemon juice before turning off heat.
  9. Garnish with parsley before serving.
