Ingredients
  

  • 1 baguette sliced into 12 pieces
  • 4 medium tomatoes diced
  • 1 bulb garlic roasted
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup fresh basil chopped

Method
 

  1. Preheat oven to 375°F (190°C). Place garlic bulb wrapped in foil, roast 20 minutes until soft and fragrant.
  2. Brush baguette slices with 1 tbsp olive oil. Toast on baking sheet for 8 minutes until golden and crisp.
  3. In bowl, combine diced tomatoes, roasted garlic cloves (mashed), balsamic vinegar, remaining olive oil, salt, and black pepper.
  4. Spoon mixture over toasted bread slices. Sprinkle chopped basil for garnish. Serve immediately before bread decides to get soggy.
