Ingredients
  

  • cups plant-based shrimp
  • 1 tablespoon coconut oil
  • 1 medium onion sliced
  • 1 tablespoon garlic minced
  • 1 tablespoon ginger grated
  • 1 cup mushrooms sliced
  • 1 cup cherry tomatoes
  • 2 tablespoons red curry paste
  • 3 cups vegetable broth
  • 1 cup coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon chili flakes
  • ¼ cup fresh coriander chopped
  • Salt to taste

Method
 

  1. Heat coconut oil in a pot and sauté onion for 2 minutes.
  2. Add garlic and ginger, then stir for 30 seconds until aromatic.
  3. Add mushrooms and tomatoes, cooking for 3 minutes.
  4. Mix in red curry paste and chili flakes.
  5. Pour in vegetable broth and bring to a boil.
  6. Add coconut milk and soy sauce, stirring well.
  7. Add plant-based shrimp and cook for 6 minutes.
  8. Turn off heat and finish with lime juice and fresh coriander.
