Ingredients
  

  • 2 cups sweet potatoes diced
  • 2 eggs
  • 1 tbsp olive oil
  • 1 small onion chopped
  • 2 garlic cloves minced
  • ½ tsp paprika
  • ½ tsp black pepper
  • Salt to taste
  • 1 tbsp parsley chopped

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced sweet potatoes (2 cups).

  5. Add minced garlic and stir for 1 minute.
